  • Salt and pepper, to taste

Instructions:

  2. In a large skillet or wok, heat the vegetable oil over high heat. Add the onion and garlic and cook for 2-3 minutes, until softened.
  3. Add the carrot, red bell pepper, and cabbage to the skillet and cook for another 3-4 minutes, until the vegetables are tender-crisp.
  4. Add the bean sprouts to the skillet and cook for another 1-2 minutes until heated.
  5. In a small bowl, whisk together the soy sauce, oyster sauce (if using), cornstarch, vegetable broth, and sesame oil.
  6. Pour the sauce over the vegetables in the skillet and stir until the sauce has thickened and coated the vegetables.
  7. Add the cooked chow mein noodles to the skillet and toss to combine with the vegetables and sauce.
  8. Season with salt and pepper to taste.

  3. Feel free to customize the vegetables to your liking. You can add or substitute any vegetables you have on hand.
  4. You can also add some protein to the dish by adding tofu, tempeh, or seitan.
  5. For added flavour, you can top the chow mein with chopped scallions, sesame seeds, or red pepper flakes.
