Savoury and Simple Vegetarian Chow Mein Recipe

That's why we're sharing a recipe from Chinese cuisine, which is famous for its wide variety of vegetarian dishes that are both delicious and healthy, vegetarian Chow Mein. Ingredients:
- 8 oz dried chow mein noodles
- 1 tablespoon vegetable oil
- 1 onion, sliced
- 2 garlic cloves, minced
- 1 carrot, julienned
- 1 red bell pepper, julienned
- 1 cup cabbage, shredded
- 1 cup bean sprouts
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (omit if vegetarian)
- 1 tablespoon cornstarch
- 1/4 cup vegetable broth
- 1 teaspoon sesame oil
- Salt and pepper, to taste
Instructions:
- Cook the chow mein noodles according to the package instructions. Drain and set aside.
- In a large skillet or wok, heat the vegetable oil over high heat. Add the onion and garlic and cook for 2-3 minutes, until softened.
- Add the carrot, red bell pepper, and cabbage to the skillet and cook for another 3-4 minutes, until the vegetables are tender-crisp.
- Add the bean sprouts to the skillet and cook for another 1-2 minutes until heated.
- In a small bowl, whisk together the soy sauce, oyster sauce (if using), cornstarch, vegetable broth, and sesame oil.
- Pour the sauce over the vegetables in the skillet and stir until the sauce has thickened and coated the vegetables.
- Add the cooked chow mein noodles to the skillet and toss to combine with the vegetables and sauce.
- Season with salt and pepper to taste.
- Serve hot, and enjoy!
Cooking Tips:
- Make sure to cook the noodles until they are al dente. Overcooked noodles can become mushy and unappetizing.
- Cut the vegetables into thin, even slices to ensure they cook evenly.
- Feel free to customize the vegetables to your liking. You can add or substitute any vegetables you have on hand.
- You can also add some protein to the dish by adding tofu, tempeh, or seitan.
- For added flavour, you can top the chow mein with chopped scallions, sesame seeds, or red pepper flakes.
